Sherry McCarthy of Arlington served this at a recent quilting get together. We all wanted the recipe and she was willing to share it with “Taste of the Times.” Its hard to believe that you shut off the oven and its still cooks to perfection. She made the pork tenderloin and it was tender, moist and very flavorful.

Easy Beef or

Pork Tenderloin

Preheat oven to 500° F. Spray baking dish with no stick cooking spray.

On a piece of waxed paper mix:

1 tsp. salt

1 tsp. pepper

2 tsp. garlic salt

Roll 2 lb. tenderloin in mixture.

Place loin in baking dish and put uncovered in hot oven.

Beef: turn off immediately.

Pork: Leave oven on approximately 10 minutes, then turn off.

Do not open oven door for 4 hours or more. The residual heat from the oven will cook the loin to perfection without drying it out. Slice and serve.
